Roasted bruschetta+caprese pasta salad


Roast tomatoes

garlic minced

onions sliced ( still intact on one end ;)

Garlic bulbs with tops cut off

Drizzle with olive oil+salt+cracked pepper + a splash or two of balsamic


Roast @400° for a good 20 min

Once tomatoes have burst toss in fresh Buffalo mozzarella pieces +chunky Parmesan .. for a min or two ..

Then take out +top with fresh basil and another handful of raw Buffalo mozzarella style cheese

✨✨✨Let cool sightly

Then toss with prepared and room temp pasta of choice:orrechetti bow tie or conchiglie

DRIZZLE with a little raspberry balsamic reduction if you dare
